Chef Collin Brown was incorporated in June 2008 as a fine dining restaurant, providing an idyllic place for those individuals wishing to experience the delights of Caribbean food in elegant sophisticated surroundings.
Chef Collin Brown’s humble beginnings started in Trelawny, Jamaica, where he was born and raised. As a child, he enjoyed cooking and officially started his career at the age of sixteen at La Roose Restaurant, Port Henderson, St Catherine (April 1990 to March 1993). At La Roose, Collin became immersed in cooking with an unparalleled appetite for learning, which soon established himself as a household name in the Port Henderson community. After his three years apprenticeship at La Roose, Collin set his sights for bigger and better and was rewarded with a position as Chef at Myrtles Restaurant, Grand Cayman (May 1994 to January 1996).
Following this successful experience, his aunt who is the Personal Chef of Harrison Ford, persuaded him to travel to the United Kingdom where his set up his catering company Ackee Ltd (February 1998 to October 2004) in the UK. Over the years Collin has created meals for an impressive list: P Diddy, Kelly Rowland, Prince Michael, The Rockefeller family, Angie Stone and Christina Milian to name a few. All these celebrity clients had one thing in common, simply the desire to experience the unrivalled taste of Jamaican food with exotic flavours and texture, created from the fusion of the passed down generations of recipes from the indigenous folks who have inhabited the islands since the 14th Century.
In 2004 Chef Brown was appointed Head Chef at ‘One Three Nine’ Restaurant in Soho, London (November 2004 to May 2005). Following this appointment, Chef Brown took on the role of Director and Executive Chef at ‘Glistening Waters’ Restaurant, Brentford, Middlesex, London, (January 2006 to January 2007).
Chef Brown’s last venture before embarking on his life-long ambition of opening his own fine-dining restaurant was at The Lane in London’s hip and trendy ‘East-End’ just off Brick Lane (January 2008 to January 2009). At The Lane Collin can be remembered for providing the most talked about event of 2008 which was the infamous Kelly Rowland of Destiny’s Child fame’s birthday bash.
Collin’s latest venture snuggled in the corner of London’s Financial District in the Docklands area, located at 2 Yabsley Street, described by those who have recently visited as a paradise setting full of ambiance and tranquility, great place for the most discerning food critic and equally for those seeking, love, solitude, entertainment, relaxation or fixing a business deal.
This venture awarded him an AA Rosette which made him the first Caribbean Chef in the world to ever achieve such an award and one of the most prestigious award from the United Nation (UN) as culinary councillor, that then catapult Chef Brown to the top of his game in Europe which landed him one of the most iconic location in Europe, The UFO Tower which is located in Bratislava Slovakia.
Chef Collin Brown continuously plays host to visiting dignitaries the Rt. Hon. Audley Shaw, Minister of Finance and the Public Service and the Governor of the Bank of Jamaica Mr. Brian Wynter visited the restaurant in March 2010 and most recently the Rt. Hon. Deputy Prime Minister Dr. Kenneth Baugh. Collin also, very recently at the request of the Jamaican High Commission in London catered for a dinner party for a number of high profile guests which included Deputy PM of Jamaica Dr. Kenneth Baugh, Chairman of Sandals Group Gordon ‘Butch’ Stewart and MP Dianne Abbot. Chef Collin Brown also occasionally provides catering services for the Jamaican High Commission based in London.
Collin is now on the path to creating the first Michelin-starred Caribbean Restaurant so he decided to take the concept back to his homeland Jamaica, where he decided to lease the Devonshire at Devon House to make it his signature Restaurant and also a Culinary Institution. Whiles in Jamaica he was Commissioned by the Rockefeller Family in New York to cater for Mr David Rockeffeller 98 Birthday dinner.
