A little about Chef Patricia Miranda Allen
Owner and Chef Proprietor of Cerro Brujo Gourmet Restaurant in Volcan, Chiriqui, Republic of Panama, founded on November 26, 1999.
Patricia specializes in the preparation of very fresh salads with organically grown vegetables and plenty edible flowers. Other "assets" of the cuisine are excellent Angus wet and dry aged beef, lamb, goat, duck and trout. Her dishes have Mediterranean and Asian influence, but are made mainly with Panamanian ingredients.
With the knowledge gained during the last decade, Patricia has managed to develop a personal style in the culinary arts to create her own recipes and also establish changes in some traditional dishes, without losing their vernacular essence. Panama produces a wide variety of herbs, vegetables, seafood and meat, always fresh, which is vital to a high quality cuisine
