We are a little late in posting this, but thought we would anyway as our holidays festivities extend through New Years Day. Nothing beats the sweet aroma of ham baking for the holidays!
Ham, like Sorrel is a traditional part of our of our our Christmas/New Year holiday fare for those who can afford it. Below is Chef Damion Stewart's recipe for preparing a Guava Glazed Baked Ham topped with pineapple slices & cherries.
CPJ Leg Ham Guava Jam 2 tbls. crushed Cloves 4 tbls. Brown Sugar 1/2 tsp. Cinnamon 1/2 tsp. Nutmeg 1 Cup Water 1/2 Cup Cherry Juice Pinch Salt
Preheat oven to 350°F
On a sheet pan, remove all the outer skin, 50 % of fat and place Ham on the trimmings
In a bowl whisk Guava Jam, clove, sugar, cinnamon, nutmeg, salt, water and cherry juice
Place Ham in oven and remove every 30 minutes to apply glaze with a pastry brush
The perfect CPJ hickory smoked Guava Glazed Ham will be ready in three (3) hours.
Garnish with canned pineapples, cherries, cloves and fresh parsley.
Can be served hot or at room temperature
