- 1 lb. Red Pak Choy wash with salt & chilled water – drain
- Chopped Onion sml
- Chopped Cilantro 3oz
- Sliver Cloves of garlic soaked in hot water & salt 6 cloves
- Chopped Scotch Bonnet Pepper to kick up flavour
- Salt to taste
- Mango Chow – any firm mangoes will do, peel, remove jaw – cut jaw in cubes
- 4 tsp. Lime Juice
- Toss all ingredients
- Chill & Serve
