Sweet Curried Blue Crab Run Down
Ingredients
1kg blue crab, cleaned
1tsp salt 4 ounce coconut oil Sauce 1tbsp curry powder 1 onion, chopped 3 cloves garlic, chopped Scotch bonnet Ginger Fresh thyme ½ cup ripe banana, puree ½ cup Gala apple, puree 1tsp ground pimento 1tsp flour 1pint coconut milk 1tsp fish seasoning Chopped scallions |
Directions
1 Chop blue crab into small pieces, season with salt and corn starch, set aside.
2 Heat coconut oil in a wok over medium heat, fry the crab in two batches, remove from oil with slotted spoon to a plate. Repeat this process until all the crabs are fried. 3 Add the curry powder, chopped, onion, garlic, ginger and flour to the wok, sauté for 2 minutes until fragrant. |
