Vege Ackee

PREP TIME: 10 Minutes        DIFFICULTY:  Easy          YIELD: 2 Serving

Ingredients

• 1 tin of ackee
  
• 1 onion
  
• 2 sprigs of spring onion
  
• 1 medium tomato
  
• 2 table spoons of oil
  
• ¼ of red pepper
  
• ¼ of green pepper
  
• 1 ring of scotch bonnet pepper
  
• 1 tea spoon of black pepper
  
• 1 tea spoon of salt
  

Directions

1. In a sauce pan add oil, onion, spring onion, red pepper, green pepper, tomato and scotch bonnet pepper and sauté for 2 min. 
2. Then add ackee and season with salt and black pepper. 
   
3. Simmer for 2 min and serve.
