What's Cooking In Jamaica
I think Jamaicans use just about every part of the COCONUT for something. And I mean every part. That’s how versatile it is. Known as the ‘Tree of Heaven’, its distinct flavour gives life to so many dishes and the health benefits are many. Coconuts not only provide a great source of protein but they also provide shelter.
But my favourite part of the coconut is when the dried meat is grated or shredded and used in cakes and other sweet Jamaican treats, like coconut drops, grater cake & gizzadas (see pictures below). Oh and your rice and peas, particularly on a Sunday is not complete without some coconut milk. And then there's Coconut Ice Cream...absolutely delicious ...more so when enjoyed with fresh strawberries! Oh yes, we are truly thankful for this wonderful nut. Cheers, Trudy
